Prawn Cocktail (my fave version)

Ingredients
2 Egg Yolks
1 Teaspoon English Mustard
1 Teaspoon Mustard Powder
250ml Vegetable Oil
2 Tablespoons Tomato Sauce
A Splash of Tabasco Sauce
50g Ready to Eat Prawns (chopped to same size as peas/sweetcorn just reserve a few whole for decoration)
1-2 Tablespoons Sweetcorn
1-2 Tablespoons Peas
1-2 Tablespoons Carrots (chopped to same size as peas/sweetcorn)
1-2 Tablespoons Red Pepper (chopped to same size as peas/sweetcorn)

Equipment
1 Mixing Bowl
1 Balloon Whisk
1 SHARP Knife
1 Chopping Board
1 Metal Spoon

The Good Bit
  1. Drop your egg yolks, mustard and mustard powder into your bowl and begin to whisk, slowly drizzle the oil in and whisk at the same time, you should get to a consistency similar to that of shop bought mayo then add in the tomato and tabasco sauce. (do not add all the oil in one go, it will spoil the mayonnaise)
  2. Now stir in the prawns, peas, sweetcorn, carrot and pepper then spoon into glasses and decorate with the reserved whole prawns and serve (or have as a side in a salad)

Chicken and Corn Soup

Ingredients
1 Large Onion (finely chopped)
1 Red Pepper (cored, de seeded and finely diced)
175g Sweetcorn
250g Cooked Chicken
750ml Chicken Stock
625g Potatoes (peeled and diced)
25g Plain Flour
450ml Milk
Salt and Pepper
1 Knob of Butter
Small Handful Chopped Fresh Parsley (roughly chopped)
A Baguette (to serve)

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan
1 Wooden Spoon

The Good Bit
  1. Melt the butter in the pan then cook the onion, pepper and potatoes over a medium heat for 5 minutes until soft but not coloured, stirring occasionally, turn down the heat and add in the flour and keep stirring for 1 minute.
  2. Next add in the stock and bring to the boil, cover and cook for ten minutes, add in the chicken, sweetcorn and milk then season to taste, throw in the parsley and stir, cover and cook for another 10 minutes (at this point the potatoes should be cooked through)
  3. Adjust the seasoning if necessary then serve with a not hot crusty baguette.

Easy Pizza

Ingredients
4 Bake Your Own Baguettes
1 Tube Tomato Purée
125g Grated Cheddar Cheese
1 Red Pepper
1 Small Onion
1x120g Can Sweetcorn

Equipment
1 SHARP Knife
1 Chopping Board
1 Baking Tray

The Good Bit
  1. Pre Heat your oven to 220c 425f gas 7. Cut the baguettes in half lengthways then in half down the middle so you end up with 4 slice (2 tops, 2 bottoms) from each baguette and then spread tomato purée over the freshly cut surface (use it as though it were butter)
  2. Sprinkle the cheese over the top (use more if you want). The choice now really is yours, i like to add strips of pepper, a few strips of onion and a sprinkle of sweetcorn, you can use whatever toppings you like, or just leave as cheese and tomato, just be aware that some things may not cook as quick as the bread so will still be raw when the pizza is served (you may need to pre cook some things, generally hard vegetables take longer to cook, unless you are using pre cooked meat, i'd leave that off, you can get away with little chunks of bacon)
  3. Cook For 8-10 until the cheese has melted and the vegetables look as though they are starting to burn. Serve immediately.

Seafood Chowder

Ingredients
1 Onion (finely chopped)
1 Clove Garlic (finely chopped)
2 Sticks Celery (sliced)
1 Large Carrot (diced)
40g Flour (preferably Wholemeal)
750ml Fish or Chicken Stock
1/2 Teaspoon Dried Oregano
Handful Fresh Parsley (roughly chopped)
2 Tablespoons Parmesan (grated)
1x120g Can Sweetcorn (drained)
250ml Milk
250g Prawns (shelled)
250g White Fish such as Haddock (chopped into bite size chunks)
250g Baby New Potatoes (or large potatoes cut to bite size chunks)
4 Bay Leaves
A Good Splash of Oil
Salt and Pepper to Season
Crème Fraiche (optional)

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan

The Good Bit
  1. Heat the oil in the pan and cook the onion and garlic together until soft (3 minutes) add in the celery and carrot and cook for a further 2 minutes, then whilst stirring, drop in the flour for another minute, finally add in the stock, potatoes, oregano and bay leaves, bring to the boil and cover, lower the heat so you have a slow simmer for 15 minutes.
  2. Once the 15 minutes is up add in the fish and cook until it goes opaque (3 minutes or so) stir in the milk and sweetcorn and bring back to the boil before adding the parmesan and parsley (at this stage you can add 5 Tablespoons of Crème Fraiche to make a really creamy chowder)
Serves 6-8

My Wife's Vegetable Soup

Ingredients
2 Large Carrots (chopped into chunks)
1 Large Onion (thinly chopped)
1/4 Cabbage (any cabbage will do but spring cabbage is best)
4 Sticks Celery (chopped into chunks)
1 Pepper (de seeded and chopped into chunks)
1x130g Can Sweet Corn (drained and washed)
1 Handful Frozen Peas
1x400g Chopped tomatoes
1 Beef Stock Cube
2 vegetable Stock Cubes
1 Chicken Stock Cube
3/4 of a Pint of Water
Salt and pepper to Season

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan

The Good Bit
  1. Add all the vegetables to the pan, pour in the water, then add the canned and frozen produce, finally stir in all the stock cubes.
  2. Bring to the boil slowly, cover and cook for 15 minutes, you can cook for longer if your vegetables are very chunky as they need to be soft and tender. Season with salt and pepper then serve with a freshly baked baguette.

Thai Omelette

Ingredients
1 Onion (thinly chopped)
2 Cloves Garlic (thinly chopped)
2 Tablespoons Chopped Green Beans
2 Tablespoons Chopped Asparagus
3 Baby Sweetcorn (thinly sliced)
1 Tomato (diced)
4 Shiitake Mushrooms (sliced)
1 1/2 Teaspoons Sugar
2 Teaspoons Soy Sauce
50ml Water
Pinch of Salt
Oil
3 Eggs (beaten)
Salt and Pepper

Equipment
1 SHARP Knife
1 Chopping Board
1 Medium Bowl
1 Frying Pan/Wok
1 Spatula

The Good Bit
  1. Heat 3 Tablespoons of groundnut oil in the pan (olive will do) fry the onion and garlic for 30 seconds then add the rest of the vegetables, the soy sauce and the sugar and stir fry for another 4 minutes.
  2. Take out of the pan and set aside, wipe the pan clean and add another dash of oil then pour in the egg and swirl it round to cover the bottom of the pan, with the spatula keep lifting the edges of the omelette to make sure it doesn't stick, when the omelette is almost firm drop the filling in the centre.
  3. Fold the edges, top and bottom over the filling to create an oblong parcel then serve and carve into 4 slices. you can add a topping of fried basil leaves for extra flare, a couple of basil leaves in the pan once your done, take out when they are wilted (seconds)

Sweetcorn Soup (with lime butter)

Ingredients
2 Sweetcorn Cobs (or 1x130g can sweetcorn)
1 Onion (finely chopped)
125g Potatoes
450ml Vegetable Stock
125ml Warm Milk
Cayenne Pepper
Salt And Pepper
FOR THE LIME BUTTER (optional but goes really well)
125g Butter (you can't use margarine here, it's too soft)
1 Lime (juiced and zested)
Fresh Coriander (1 handful chopped)

Equipment
1 SHARP Knife
1 Chopping Board
1 Frying Pan
A Blender
1 Zester/Juicer
Kitchen Foil
A Small Mixing Bowl
1 Large Pan

The Good Bit
  1. Mix the butter, lime juice, zest and coriander in the small bowl until well mixed add a pinch of salt and pepper too. tip onto the kitchen foil and make into a sausage shape then whack it in the freezer (in the foil)
  2. Cook the corn under a medium grill for 15 minutes, turning occasionally until slightly charred all the way around (alternatively dry fry it in a frying pan with no oil, this is the best way to do it if you are using drained corn from a can)
  3. Heat a splash of oil in a pan and cook the onion for 5 mins until golden (you can add a garlic clove at this stage) then add the potatoes and cook for another 5 mins. Now strip the corn from the cob and add it to this pan along with the stock and the milk, cover and cook for 30mins.
  4. Blend well and return back to the pan, add a pinch of cayenne pepper and season to taste, serve hot with slices of the lime butter.

Beef And Bok Choy

Ingredients
1 Bok Choy or 250g Salad Leaves (torn into pieces)
500g Steak (Pieces/Cubes Whatever is cheap)
150g Mangetout or Similar
150g Baby Sweetcorn (most supermarkets do these in a pack with mangetout, BONUS)
6 Spring/Salad Onions (chopped into cm long pieces)
2 Red Peppers (cut into thin strips)
2 Tablespoons Oyster Sauce
1 Tablespoon Fish Sauce
1 Tablespoon Sugar
A Splash of Oil
Noodles or Rice to Serve

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Wok
A Steamer (optional)
1 Spatula

The Good Bit
  1. Steam your bok choy (or heat in a wok with a little water) until they start to wilt, remove and keep warm if you can.
  2. Add a splash of oil to your wok (clean and dry it if you have just done your leaves in it), fry the beef until it just begins to brown on all sides, then add the mangetout, sweetcorn, spring onions, pepper, oyster and fish sauces and the sugar.
  3. Stir fry (fry over a high heat but keep the food moving with your spatula) for 3 minutes or until the peppers just begins to go soft, serve this onto a bed of the bok choy or salad leaves with noodles or rice.

Thai Red or Green Curry


Ingredients
4 Chicken Breasts (chopped into chunks)
1 Jar/Sachet Thai Red/Green Curry Paste (red is hotter, i'll be showing how to make your own at a latter date)
1 400g Can Coconut Milk
1 130g Can of Sweetcorn (drained)
250g Rice (anything but pudding)
A Splash of Olive Oil

Equipment
1 Sharp Knife
1 Chopping Board
1 Large Frying Pan/Wok
1 Large Pan
a Spatula
1 Wooden Spoon
1 Colander

The Good Bit
  1. Heat the oil in your frying pan and fill the large pan 2/3rds full with water, add salt and bring that to the boil.
  2. Fry the chicken until it begins to brown on all sides, add the given amount of Thai green or red curry paste (usually 2-3 tablespoons, check the packet) and stir very well, then add the coconut milk and sweetcorn and brink to a low simmer, stirring occasionally.
  3. Add the rice to the water and cook according to packet instructions (10-15 minutes), when you think the rice is done TRY it, if it's still a little hard cook a little longer. Pour the rice into a colander and rinse with a kettle full of boiling water.
  4. Once the rice is done, serve in a ring on 4 plates and spoon in the red or green curry.

Risotto

Ingredients
250g Risotto Rice (long grain will do)
600ml Water
2 Chicken Stock Cubes
2 Vegetable Stock Cubes
1 Large Onion
1 Large Pepper
1 130g Can of Sweetcorn
1 400g Can of Kidney Beans (or a handful of button mushrooms quartered)
1 200g Can of Mixed Beans
200g Frozen Peas
Olive Oil
A Knob of Butter

Equipment
1 Large Frying Pan
1 Sharp Knife
1 Chopping Board
1 Spatula

The Good Bit
  1. Heat a splash of oil in your frying pan, and add to it a coarsely chopped onion and pepper, cook until the onion has softened and begun to turn brown. Add to this the knob of butter then add all your rice and stir fry for about a minute.
  2. Add then all your water and all 4 stock cubes and bring to the boil, add the contents of the 3 cans at this stage making sure they have been well drained or the quartered button mushrooms if you are using them and the frozen peas, bring to the boil and simmer for 15 minutes stirring occasionally.
  3. Play at being a chef by adding whatever herbs you like, don't over do it, only add a teaspoon of one type at most (dry herbs) and don't be tempted to use more than maybe 3 herbs, i like basil here, if you are going to use fresh herbs, chop them well and add a minute before you serve add in a good knob of butter, stir well and then serve. How's this for a recommendation! Our dog who will eat a piece of dropped meat before it has chance to land on the floor and yet will pick out and leave the vegetables from a plate of Sunday dinner (and for some reason arrange the carrots around the edge of the plate) LOVES this meal

Vegetable Chili

Ingredients
1 Vegetable stock Cube
1 Sachet Chilli Sauce Mix
1 400g Can Mixed Beans
1 400g Can Chopped Tomatoes
1 400g Can Kidney Beans
1 130g Can Sweetcorn
150ml Strong Black Coffee
1 Large Onion
1 Pepper (any colour you want)
250g Rice (just not pudding rice)
A Splash of Olive Oil

Equipment
A Wok or Large Frying Pan
1 Large Pan
1 Wooden or Plastic Spatula
1 Wooden or Plastic Serving Spoon
1 SHARP Knife
A Chopping Board (Acrylic or Wood, Glass blunts your blades very quickly!!)

The Good Bit
  1. Start by warming your dash of oil in the wok/frying pan, don't worry about how much you put in just give it a good drizzle just take into account your not deep frying chips!
  2. Whilst your oil is warming, its prep time. Peel and cut your onion and pepper into small chunks. Open your cans and drain the kidney beans and sweetcorn. 2/3rds fill your large pan with water and add a sprinkle of salt and bring to the boil.
  3. Now your oil is warm (if it's smoking turn it down a little) put your onions and pepper in until they feel soft and the onions look to have gone clearer, about 5 minutes
  4. Add your cans of mixed beans and kidney beans, you should now add the stock cube and stir in well.
  5. Add your chilli sauce mix and coffee and stir in well then add the tomatoes and sweetcorn, stir and leave to simmer.
  6. The water in your other pan should now be boiling so add the rice and stir with the spoon, cook the rice to packet instructions, usually 10-15 minutes.
  7. Have a kettle of boiled water ready for when your rice is done, once the rice is done (you can taste a small amount to see if it is soft (done) or a little crunchy (needs a Little longer) put it in a colander and wash with the boiled water.
  8. Serve the rice in a ring and heap the chilli in the centre and how about a dollop of soured cream at the side of the plate sprinkled with chilli powder or cayenne pepper for when you are entertaining

Chili Con Carne


Ingredients
200g Mince Beef
2 Beef Stock Cubes
1 Sachet Chilli Sauce Mix
1 400g Can Chopped Tomatoes
1 400g Can Kidney Beans
1 130g Can Sweetcorn
1 Large Onion
250g Rice (Long Grain,Basmati whatever you have, just not pudding rice)
A Splash of Oil (Olive or Extra Virgin Olive Preferred but Vegetable/Sunflower are fine)

Equipment
A Wok or Large Frying Pan
1 Large Pan
1 Wooden or Plastic Spatula
1 Wooden or Plastic Serving Spoon
1 SHARP Knife
A Chopping Board (Acrylic or Wood, Glass blunts your blades very quickly!!)

The Good Bit

  6. The water in your other pan should be boiling by now so carefully add the rice and stir with the spoon (if the water is boiling you should be able to leave this pan alone without fear of the rice sticking) Cook the rice to packet instructions, usually 10-15 minutes.
  7. Have a kettle of boiled water ready for when your rice is done, once the rice is done (you can taste a small amount to see if it is soft (done) or a little crunchy (needs a Little longer) put it in a colander and wash with the boiled water.
  8. Serve the rice in a ring and heap the chilli in the centre, you can garnish with coriander if you want to be fancy, and how about a dollop of soured cream at the side of the plate sprinkled with chilli powder or cayenne pepper.
Serves 4. (I added a chopped green pepper to the onions 2 bulk out a little (I was hungry!)
