Prawn Cocktail (my fave version)

Ingredients
2 Egg Yolks
1 Teaspoon English Mustard
1 Teaspoon Mustard Powder
250ml Vegetable Oil
2 Tablespoons Tomato Sauce
A Splash of Tabasco Sauce
50g Ready to Eat Prawns (chopped to same size as peas/sweetcorn just reserve a few whole for decoration)
1-2 Tablespoons Sweetcorn
1-2 Tablespoons Peas
1-2 Tablespoons Carrots (chopped to same size as peas/sweetcorn)
1-2 Tablespoons Red Pepper (chopped to same size as peas/sweetcorn)

Equipment
1 Mixing Bowl
1 Balloon Whisk
1 SHARP Knife
1 Chopping Board
1 Metal Spoon

The Good Bit
  1. Drop your egg yolks, mustard and mustard powder into your bowl and begin to whisk, slowly drizzle the oil in and whisk at the same time, you should get to a consistency similar to that of shop bought mayo then add in the tomato and tabasco sauce. (do not add all the oil in one go, it will spoil the mayonnaise)
  2. Now stir in the prawns, peas, sweetcorn, carrot and pepper then spoon into glasses and decorate with the reserved whole prawns and serve (or have as a side in a salad)

Thai Steak Salad

Ingredients
400g Rump Steak
1 Lime (juiced)
5 Tablespoons Sweet Chilli Sauce
1/2 Stalk Fresh Lemon Grass (finely chopped)
1/2 Iceberg Lettuce (shredded)
1 Large Carrot (grated)
150g Red Grapes (halved)
25g Roasted Peanuts (chopped/roughly crushed)
Oil

Equipment
1 SHARP Knife
1 Chopping Board
1 Pastry Brush
1 Griddle Pan
1 Large Mixing Bowl
1 Small Mixing Bowl

The Good Bit
  1. Brush your steak with oil then griddle on each side for 3 minutes until it is cooked until medium rare (or longer if you want it well done)
  2. In the meantime, mix the lime juice, chilli sauce and lemon grass in your small bowl, tip half into a larger bowl, then toss in the lettuce, carrot and grapes into the larger bowl and mix well.
  3. Serve your salad onto four plates, slice the steak and serve on top, sprinkle over the nuts and drizzle the remaining sauce over the top.

Bertrands 'World Peace' Soup

Ingredients
A Good Knob of Butter
3-4 Carrots (sliced)
2-3 Sticks of Celery (sliced)
2 Onions (roughly chopped)
1 Chilli (de seeded and sliced)
3-4 Cloves Garlic (finely chopped)
7 Tomatoes (quartered)
1x400g Can Chopped Plum Tomatoes
A Handful of Basil Leaves (torn)
2 Pints Vegetable Stock
300ml Single Cream

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan
1 Blender

The Good Bit
  1. Melt the butter in the pan and gently soften the onion and garlic for about 5 minutes before adding the carrots and celery, cook for another 5 minutes then add in the tomatoes (canned and chopped) along with the chilli and basil.
  2. Cook this lot until the tomatoes are soft, then add 2 Pints of vegetable stock and transfer the mixture to a blender. blend until smooth then add in the cream, re heat and serve topped with sprigs of parsley and a nice warm baguette.

Beef Medallions in Peppercorn Sauce


Ingredients
4 Beef Rondels/Medallions
1 Packet Peppercorn Sauce Mix
3 Large Carrots (sliced or julienne if you are being fancy)
125g Haricot Verts
8 Medium Potatoes
Butter
Milk or Cream
Salt and Pepper

Equipment
1 Griddle Pan
1 SHARP Knife
1 Chopping Board
1 Sauce Pan
2 Large Pans (with salted water in)
1 Masher

The Good Bit
  1. Get the carrots and haricots verts in the pan with the water and bring to the boil on a low simmer, leaving for 10 minutes, until they are soft. At the same time boil the potatoes up in the other pan, again for about 10 minutes (stick a fork in them to see if they are done, you want them to break easily so they may need a little longer, your carrots are ok just to sit in the warm water.
  2. On your griddle, heat to a high heat and add no oil, you want to sear both sides of the steak for about 5 minutes, whilst that is on make the peppercorn sauce according to the packet instructions, that's just usually adding a quantity of milk and bringing to a simmer.
  3. Drain then mash your potatoes, add a knob of butter and cream (if your using it) or milk, season with salt and pepper.
  4. Divide your mash between four plates, sit your steak on top, and drizzle over the peppercorn sauce, drain your carrots and haricots vert and add a knob of butter, give the pan a good shake to cover all the contents in the butter then serve at the side.

Lamb Stew

Ingredients
1kg Lamb (cubed, neck is a good cut to use)
2 Large Onions (sliced)
1Kg Potatoes (sliced)
2 Large Carrots (diced)
400ml Chicken Stock (lamb or vegetable are ok as well)
Handful Fresh Parsley (chopped)
Butter
Salt and Pepper

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan or preferably Casserole Dish
Greaseproof paper
Tin Foil

The Good Bit
  1. If you have a casserole dish, pre heat your oven too 160c 335f gas 3, if not we'll use the hob. Start by layering your vegetables and lamb into the pan, make the top layer one of potato slices, you want to sprinkle salt, pepper and a bit of chopped parsley on each layer, but leave the last layer (your potatoes) alone, then pour on the stock.
  2. Grease your greaseproof paper with a bit of butter then cover your dish or pan tightly with it, now add a tight layer of tin foil and finally a lid, if your are using the oven put the casserole dish in now and leave for 1 1/2 to 2 hours, on the hob you want to bring the pan to the boil first then reduce the heat and leave to simmer for about the same length of time.
  3. Serving suggestion, if you have too much liquid, take a few of the potato slices and mash them then add them back to the stew and heat. Finally add a garnish of parsley, season to taste and serve.

Spicey Roast Lamb

Ingredients
1.5Kg Leg of Lamb
1 Teaspoon Each Chilli Powder, Garlic (crushed), Coriander, Cumin, Salt
1 Tablespoon Breadcrumbs
2 Tablespoons Lemon Juice
2 Tablespoons Sultanas
3 Tablespoons Natural Yoghurt
Oil
Salad Leaves, Cherry Tomatoes, Lemon Wedges, Chopped Fresh Coriander and Grated Carrot to serve

Equipment
1 Mixing Bowl
1 Blender
Tin Foil
1 SHARP Knife

The Good Bit
  1. Pre heat your oven too 180c 350f gas mark 4, trim any fat that you can from the leg of lamb, rinse it, then pat dry and set on a sheet of tin foil that will be large enough to cover it.
  2. Mix all the teaspoons of spices together in the mixing bowl, the rest of the ingredients (breadcrumbs, yoghurt, lemon juice, sultanas and a splash of oil) should be blended until you have a smooth paste, combine this then with the spice mixture and mix well.
  3. Pour your spice mixture over your lamb and rub it in well then cover with the tin foil, cook in the oven for 1 hour 30 minutes, remove and with the juices in the tin foil baste the leg again, you may need to use a spoon here, this time whack the lamb in the oven uncovered to brown off for 45 minutes.
  4. Serve on a bed of salad leaves, chopped cherry tomatoes and fresh coriander and maybe some grated carrot and lemon wedges.

Shepherds Pie

Ingredients
450g Potatoes
1 Large Onion (finely chopped)
2 Large Carrots (diced)
400g Minced Lamb
75g Frozen Peas
2 Beef Stock Cubes
2 Vegetable Stock Cubes
250ml Hot Lamb Stock
Worcestershire Sauce, Tomato Sauce and Brown Sauce
A Splash of Oil
Milk
A Knob of Butter
100g Grated Cheddar Cheese

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Frying Pan/Wok
1 Large Pan
4 Little Oven Dishes (the size you get in restaurants when you order something like this)
OR
1 Large Oven Dish
1 Grater

The Good Bit
  1. Start by cutting your potatoes into bite size pieces then cooking in a large pan of salted water for 10 minutes (or microwave in a covered pan without water for about the same length of time) Check the potatoes with a fork, if they break easily then they'll be fine to mash if not cook a little longer (if you microwave, shake them around in the covered pan and if they break on the side and lid then hey presto!)
  2. Meanwhile fry the onion in a little oil in the frying pan until it's golden and soft then add the meat and carrot and cook until the meat is all brown, at this point add all four stock cubes well crumbled to the frying pan and stir in well before adding a good splash of each of the sauces, the lamb stock and the frozen peas, bring to the boil and simmer for 5 minutes.
  3. You should now have a little time on your hands to mash the potatoes. Drain the water and get busy! if you've cooked the potatoes long enough this should be relatively easy, once they are fairly well mashed add in a good knob of butter and a splash of milk, keep mashing until you have a fairly thick but smooth consistency, if it's like concrete then add another splash of milk, again it's easier to ad more milk if needed than to take out!
  4. At this point you have a choice, mix the cheese in with the mash or serve on top, Serve your meat into your pie dish/dishes and top with the mash then put in an oven for 30mins 210c 410f, serve when ready

Carrot and Coriander Pate

Ingredients
500g Carrots (sliced thinly or grated for better results)
1 Tablespoon Ground Coriander
300ml Water
175ml Fresh Orange Juice
50g Soft Cheese
30g Fresh Coriander Leaves
Salt and Pepper
French Bread or Crackers to Serve

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan
1 Blender

The Good Bit
  1. Put the carrot, ground coriander and the liquids in a pan, cover and simmer for 40 minutes, allow to cool then give a good blending! add in the soft cheese, the fresh corainder leaves, blend again until smooth and then season to taste.
  2. Chill before serving.

Carrot Pate

Ingredients
500g Carrots (sliced thinly)
175ml Orange Juice (squeezed not from concentrate)
300ml Water
50g Cream Cheese (or a soft cheese spread)
30g Fresh Coriander Leaves
1 Tablespoon Ground Coriander
Salt and Pepper
French Bread (to serve or crackers)

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan
A Blender

The Good Bit
  1. Cook the carrot, ground coriander, orange juice and water together in a covered pan for 40 minutes, then allow to cool and blend well in the processor. Add in the cream cheese and coriander leaves (and if needed a little of the cooking juices) until you have a smooth paste then season to taste.
  2. Serve on a sliced baguette, or on crackers.

Seafood Chowder

Ingredients
1 Onion (finely chopped)
1 Clove Garlic (finely chopped)
2 Sticks Celery (sliced)
1 Large Carrot (diced)
40g Flour (preferably Wholemeal)
750ml Fish or Chicken Stock
1/2 Teaspoon Dried Oregano
Handful Fresh Parsley (roughly chopped)
2 Tablespoons Parmesan (grated)
1x120g Can Sweetcorn (drained)
250ml Milk
250g Prawns (shelled)
250g White Fish such as Haddock (chopped into bite size chunks)
250g Baby New Potatoes (or large potatoes cut to bite size chunks)
4 Bay Leaves
A Good Splash of Oil
Salt and Pepper to Season
Crème Fraiche (optional)

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan

The Good Bit
  1. Heat the oil in the pan and cook the onion and garlic together until soft (3 minutes) add in the celery and carrot and cook for a further 2 minutes, then whilst stirring, drop in the flour for another minute, finally add in the stock, potatoes, oregano and bay leaves, bring to the boil and cover, lower the heat so you have a slow simmer for 15 minutes.
  2. Once the 15 minutes is up add in the fish and cook until it goes opaque (3 minutes or so) stir in the milk and sweetcorn and bring back to the boil before adding the parmesan and parsley (at this stage you can add 5 Tablespoons of Crème Fraiche to make a really creamy chowder)
Serves 6-8

Beef Stew With a Healthy Twist

Ingredients
500g Beef (cut into chunks)
750ml Chicken Stock
120ml White Wine
1 Carrot (halved lengthways then sliced)
1 Clove Garlic (finely chopped)
1 Stick Celery (finely sliced)
300g Baby Onions (peeled, if using shallots 1/4 them)
180g Button Mushrooms (quartered)
1 Teaspoon Dried Thyme
1 Bay Leaf
1 Teaspoon Dried Parsley
1 Tablespoon Lemon Juice
2 Tablespoons Cornflour
125g Natural Yoghurt
Knob of Butter
Splash of Oil
Salt and Pepper

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan
2 Small Frying Pans
1 Large Bowl
1 Slotted Spoon
1 Spatula

The Good Bit
  1. In the pan, heat a little oil then cook the meat until it is evenly browned on all sides, add 500ml of stock, the wine, carrot, celery, thyme, garlic and bay leaf, bring to the boil and simmer for 20 minutes.
  2. In the frying pan, pour in the rest of the stock and drop in the onions, cooking until all the stock has gone, then remove from the heat and set aside.
  3. In the other frying pan, heat another splash of oil and drop in the knob of butter, went it is bubbling add in the mushrooms and cook until they are soft then stir in the lemon juice and remove from the heat then set that aside too.
  4. With the slotted spoon, remove the meat and vegetables from the broth and place in the large bowl, remove the bay leaf and throw away, blend a the cornflour in a cup with a little of the broth then tip it back into the pan, simmer away until the broth has thickened, reduce the heat again now and stir in the yoghurt, finally add all the other ingredients and the teaspoon of parsley, heat through then serve.

Beef and Pasta Bows

Ingredients
300g Pasta Bows
350g Minced Beef
1 Onion (finely chopped)
2 Cloves Garlic (finely chopped)
1 Courgette (chopped into chunks)
1 Carrot (diced)
1 Red Pepper (cored de seeded and chopped into chunks)
125g Button Mushrooms (quartered)
250ml Red Wine
1x400g Can Chopped Tomatoes
3 Tablespoons Fresh Parsley (roughly chopped)
2 Tablespoons Fresh Basil (roughly chopped)

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan (2/3 rds full with boiling salted water)
1 Large Frying Pan
1 Spatula
1 Colander

The Good Bit
  1. Cook the pasta according to packet instructions (usually about 10 minutes) when the pasta is just beginning to go soft, drain the in the colander and set aside.
  2. In the frying pan stir fry the beef and onion until the meat is browned (about 8 minutes) then add in the rest of the vegetables and cook until they are soft and tender (about 6 minutes) then add in the red wine and cook until all the liquid has gone.
  3. Add in the tomatoes (and a few chopped ones to if you want to fill the meal out a little) and simmer for 5 minutes, adjust the seasoning then add in the herbs and pasta, reheat quickly and serve.

My Wife's Vegetable Soup

Ingredients
2 Large Carrots (chopped into chunks)
1 Large Onion (thinly chopped)
1/4 Cabbage (any cabbage will do but spring cabbage is best)
4 Sticks Celery (chopped into chunks)
1 Pepper (de seeded and chopped into chunks)
1x130g Can Sweet Corn (drained and washed)
1 Handful Frozen Peas
1x400g Chopped tomatoes
1 Beef Stock Cube
2 vegetable Stock Cubes
1 Chicken Stock Cube
3/4 of a Pint of Water
Salt and pepper to Season

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan

The Good Bit
  1. Add all the vegetables to the pan, pour in the water, then add the canned and frozen produce, finally stir in all the stock cubes.
  2. Bring to the boil slowly, cover and cook for 15 minutes, you can cook for longer if your vegetables are very chunky as they need to be soft and tender. Season with salt and pepper then serve with a freshly baked baguette.

Pot Roast Beef

Ingredients
1.25kg Beef (topside or silverside)
2 Large Onions (quartered)
2 Carrots (cut into 1cm long chunks)
1 Bouquet Garni (or 2 Sprigs each Thyme, parsley and Marjoram)
4 Black Pepper Corns
1/2 Teaspoon Salt
150ml Red Wine
450ml Water
2 Teaspoons Cornflour
4 Tablespoons Oil
25g Butter

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Frying Pan
1 Casserole Dish With Lid
Silver Foil
1 Slotted Spoon
1 Cup

The Good Bit
  1. Pre heat the oven to 150c 300f gas 2. Heat the oil and butter in the frying pan and cook the beef until browned evenly all over. remove and place in the casserole dish, surround with the vegetables, add the herbs, salt and peppercorns and top up with the wine and water.
  2. Cover with foil then the lid and place in the oven for 3 hours.
  3. Pull the beef out when done and leave to rest on a serving plate, surround it with the vegetables, discard the bouquet garni (or sprigs) and transfer the juices to the frying pan and bring to the boil.
  4. In the cup add the cornflour and approximately 1 1/2 teaspoons of water, mix until you have a smooth paste then add a little of the gravy, stir well then pour this mixture into the frying pan too stirring continuously, if the sauce is too thick just add a little water. pour the sauce over the beef and vegetables and serve

Oyster Sauce Beef

Ingredients
300g Beef (cut into strips)
1 Teaspoon Sugar
1 Tablespoon Light Soy Sauce
1 Teaspoon Sherry
1 Teaspoon Cornflour (mixed with 1 1/2 teaspoons cold water)
1 Carrot
60g Mangetout
60g Bamboo Shoots (canned will do fine)
60g Straw Mushrooms (any mushroom will do)
1 Spring Onion (cut into bite size strips)
2 Small Slices Root Ginger
1/2 Teaspoon Salt
2 Tablespoons Oyster Sauce
3 Tablespoons Chinese Stock (or water)
60ml Vegetable Oil

Equipment
1 SHARP Knife
1 Chopping Board
1 Mixing Bowl
1 Wok
1 Slotted Spoon
1 Spatula

The Good Bit
  1. place the meat in the mixing bowl along with the sugar, soy sauce, sherry and cornflour (and water) mixture, set aside and marinate for 30 minutes.
  2. Heat the oil in the wok and add the beef slices for about 1 minute, remove and keep warm.
  3. Pour off the oil leaving about 1 tablespoon in the wok, add all the vegetables and the ginger and stir fry for about 2 minutes, then add the salt, beef, oyster sauce and stock (or water) mix really well and serve when piping hot through out.

Beef and Guinness Stew

Ingredients
1kg Beef (cubed)
1 Large Onion (roughly chopped)
1 Carrot (roughly sliced)
1/2 Pint Guinness
750ml Water
50g Flour
1 Bay Leaf
125g Prunes (pitted and soaked)
Handful Fresh Parsley (roughly chopped)
A Good |Splash of Oil
Baked Potatoes to Serve

Equipment
1 SHARP Knife
1 Chopping Board
1 Frying Pan
1 Mixing Bowl
1 Spatula
1 Wooden Spoon

The Good Bit
  1. Season the salt flour with salt and pepper in the mixing bowl, chuck in the beef and mix until it is well coated, transfer to the frying pan and fry in the oil until the beef is coloured all over then add the onions and cook for another 2 minutes.
  2. Tip in the rest of the flour and stir well, then drop in the carrot Guinness and water, mixing really well, bring to the boil then lower the heat, cover and simmer for 1 3/4hrs, 30 minutes before the end add the prunes and stir in.
  3. Remove the bay leaf, taste and adjust the seasoning if required. Serve with baked potatoes and then sprinkle with the parsley.

Stir Fried Pork With Vegetables

Ingredients
250g Pork Fillet (thinly sliced)
1 Teaspoon Sugar
1 Tablespoon Light Soy Sauce
1 Teaspoon Sherry
1 Teaspoon Cornflour (mixed with 1 1/2 teaspoons cold water)
1 Carrot (cut into slices diagonally)
1 Green Pepper (de seeded and chopped into bite size chunks)
175g Mixed Salad Leaves (shredded)
1 Spring Onion (cut to the same size as everything else)
1/2 Teaspoon Dried Ginger
1 Teaspoon Salt
3 Tablespoons Vegetable or Pork Stock (water will do)
4 Tablespoons Olive Oil

Equipment
1 SHARP Knife
1 Chopping Board
2 Mixing Bowls
1 Slotted Spoon
1 Wok
1 Spatula

The Good Bit
  1. In one of the mixing bowls mix together the pork strips, 1/2 of the sugar, 1/2 the soy sauce, the sherry, corn flour and water mixture, mix well and set aside in the fridge whilst you prepare the rest.
  2. Get the oil warm in the wok then drop in the pork and stir fry over a high heat for a minute to seal in the flavours then remove with the slotted spoon. Chuck in the vegetables and ginger and stir fry for 2 minutes.
  3. Add in the salt, the rest of the sugar and soy sauce along with the stock, bring to the boil, stirring well then serve.

Sunday Roast Chicken

Ingredients
1 Chicken
300ml Vegetable or Chicken Stock (if you are doing carrots, peas or any vegetables, then use the water from that pan once the vegetables are cooked for a really excellent flavour)
Vegetables of Your Choice (boiled in unsalted water)
6 Medium Potatoes (quartered)
Oil

Equipment
2 Roasting Tins
2 Large Pans
1 SHARP Knife
1 Chopping Board

The Good Bit
  1. OK now before I start here, there are many ways to make this meal, I'll cover the ones I like and throw in suggestions. Pre heat your oven to 160c/325f gas 3.
  2. Weigh your bird! then work out the cooking time with this simple formula (don't worry!!) 30minutes for the first 1lb in weight then after every pound add another 15 minutes so a 1lb bird would take 30minutes, a 2lb bird 45minutes, 3lb 60minutes, 4lb 1hr15 and so on.
  3. Wash the bird, place it on the roasting tin and place in the oven for the desired time!
  4. Now for the vegetables, i like roast potatoes (quartered) with this meal so i chuck them in the other tin, drizzle with oil, sprinkle with sea salt and put in the oven when the chicken has 45 minutes left, you can also do this with carrots and parsnips.
  5. I love carrot with this meal and peas, so i cook them in pans of unsalted water until they are tender, sliced carrots take 10-15 minutes, peas only take 5-10 minutes.
  6. For the gravy, this is a thin one, I pour some of the carrot juice and some of the pea juice into the roasting tin, stir it in well and ladle it over the meal, if you want to make it slightly thicker add a tablespoon of flour and fry until the flour has begun to brown then add the carrot/pea juice or stock.

Chicken Satay

Ingredients
4 Chicken Breasts
1 400g Can Coconut Milk
2 Teaspoons Worcestershire Sauce
8 Tablespoons Crunchy Peanut Butter
2 Lemons
2 Carrots (cut into ribbons using a potato peeler)
1/2 Cucumber (cut into ribbons using a potato peeler)
50g Dry Roasted Peanuts
4 Warm Nan Breads
Tabasco Sauce (optional)

Equipment
1 SHARP Knife
1 Chopping Board
1 Potato Peeler
1 Mixing Bowl
1 Wooden Spoon
1 Rolling Pin (or something heavy)
1 Plastic Food Bag
1 Shallow Dish
8 Bamboo Skewers

The Good Bit
  1. Pre heat your grill to high. Place each of the breasts in the food bag and bat them out as thin as possible with the rolling pin, take out and cut in half lengthways.
  2. In the mixing bowl, mix together the coconut, peanut butter and Worcestershire sauce (Tabasco as well if using) then pour into the shallow dish. Toss in the chicken strips, coating well them thread each one onto a skewer and cook under the grill until well browned all over.
  3. Heat the remaining satay sauce with a dash of water and squeeze in the juice from 1 of the lemons. Warm your nans to the packet instructions.
  4. To serve, on each nan pile some of the carrot and cucumber ribbons with a splash of lemon juice from the other lemon, place on top 2 chicken skewers and drizzle over some of the peanut sauce.

Chicken Chop Suey

Ingredients
125g Chicken (chopped into chunks)
1 Onion (chopped thinly)
1 Carrot (julienne/grated)
1 Green Pepper (julienne/grated)
125g Bean Sprouts
1 Egg (split, white is all we need)
1 Teaspoon Sherry
1 Tablespoon Light Soy Sauce
2-3 Tablespoons Chinese stock (or water)
2 Teaspoons Cornflour
1/2 Teaspoon Sugar
Pinch of Salt
Splash of Oil

Equipment
1 SHARP Knife
1 Chopping Board
1 Small Glass
1 Mixing Bowl
1 Wok
1 Spatula

The Good Bit
  1. Mix the cornflour into a paste in the glass with 3 teaspoons of water, then in the mixing bowl in this order mix in the chicken, a pinch of salt, 1/4 of the egg white and the paste you have just made.
  2. Stir fry the chicken in a splash of oil until it is no longer pink, it should be white all over, take out of the wok and set aside. Add all the vegetables apart from the bean sprouts and cook for about 2 minutes then add the bean sprouts and fry off rapidly for a few seconds.
  3. Now add back in the chicken, another pinch of salt, the sugar, soy sauce and sherry mix this well then add in the stock or water, give it a good stir then serve, for authenticity you can sprinkle over a dash of sesame oil if you like.
