Mini Lamb Kebabs and Baby Onions

Ingredients
450g Lamb (minced)
1 Onion (thinly chopped)
1 Teaspoon Each Garam Masala, Garlic (crushed) Salt
4 Tablespoons Fresh Coriander (chopped)
6 Green Chillies (sliced, de seeded for a cooler kebab)
1 Tablespoon Flour
12 Baby Onions (de-skinned but left whole)
12 Cherry Tomatoes
Oil

Equipment
1 SHARP Knife
1 Chopping Board
1 Wok
1 Blender
1 Spatula
1 Mixing Bowl
Wooden Skewers (soaked in water for 20 minutes before hand)
1 Pastry Brush

The Good Bit
  1. Ok, in the mixing bowl along with the minced lamb, add the chopped onion, garam masala, 1/3 of your chillies, 1/2 the coriander, salt and flour, get your hands in there and give it a good mix, then transfer to your blender and give it a blast for about 1 minute.
  2. Now take out clumps of the mixture about the size of a lime and form around the skewers, you should be able to get 2 clumps on each skewer, continue until all the mixture is used up.
  3. You now want to brush the kebabs with a little oil then stick them under a very hot grill, turning and re basting occasionally for 12-15 minutes, until the meat is evenly brown all over.
  4. Now heat a good splash of oil in your wok and drop in the onions, when they start to brown you can add the tomatoes and the rest of your chillies, now slide the kebabs carefully from the skewers into the wok and cook, stirring slowly for 3 minutes.
  5. Serve and garnish with a sprinkling of coriander which you should have left.

Chilli Prawns

Ingredients
625g Tiger Prawns
5 Tablespoons Soy Sauce
5 Tablespoons Sherry
5 Tablespoons Water
3 Red Chillies (de seeded and thinly chopped)
2 Cloves Garlic (crushed)
1 Inch Fresh Ginger (grated)
90g Cashew Nuts
2 Teaspoons Cornflour
A Handful of Spring Onions (thinly chopped)

Equipment
1 SHARP Knife
1 Chopping Board
1 Wok
1 Spatula
1 Mixing Bowl
1 Slotted Spoon

The Good Bit
  1. Mix the soy, sherry, water, chillies, garlic and ginger together in the mixing bowl and then drop in the prawns, spring onion and nuts, stir well then cover and leave for a good 2 hours.
  2. Using the slotted spoon, remove the prawns, nuts and onion from the sauce and cook rapidly in your wok with a little oil, cook for 2 minutes. Mix the little bit of cornflour with the sauce and stir it into the wok for about 30 seconds until the sauce thickens.
  3. Serve with rice

Prawn Stir Fry with Lemon Grass

Ingredients
1/2 Cucumber (cut into thin strips)
2 Teaspoons Cornflour
2 tablespoons Water
1 Tablespoon Soy Sauce (dark)
1/2 Teaspoon Fish Sauce
6 Spring Onions (halved lengthways and cut into 5cm chunks)
1 Stalk Lemon Grass (sliced thinly)
1 Clove Garlic (chopped)
1 Red Chilli (thinly chopped)
125g Oyster Mushrooms (any will do but oyster give a good look and texture)
1inch Fresh Ginger (grated)
350g Frozen Prawns (defrosted)
2 Tablespoons Sherry

Equipment
1 SHARP Knife
1 Chopping Board
1 Wok
1 Spatula
1 Small Mixing Bowl

The Good Bit
  1. Mix the cornflour, water, soy and fish sauce until you have a nice paste then set aside., meanwhile with a splash of oil in your wok, add in the spring onion, cucumber, lemon grass, chilli, mushroom and ginger and fry for 2 minutes.
  2. Then add in the prawns and stir fry until the prawns are warmed through (1-2 minutes) now pour in the sauce mixture along with the sherry and cook until you have a thick sauce, serve immediately with rice.

Spicey Peppered Steak

Ingredients
1 Tablespoon Peppercorns (freshly crushed)
3 Tablespoons Vegetable Oil
500g Steak (cut into thin strips)
1 Red Pepper (cored, de seeded and cut into thin strips)
2 Red chillies (de seeded and finely chopped, leave seeded for extra heat)
1in Ginger (cut into matchstick size strips)
2 Cloves Garlic (crushed)
2 Tablespoons Cornflour
4 Tablespoons Water
3 tablespoons Soy Sauce
2 Teaspoons Dark Soft Brown Sugar

Equipment
1 SHARP Knife
1 Chopping Board
1 Wok
1 Garlic Press
1 Mixing Bowl
1 Spatula
1 Bowl

The Good Bit
  1. Mix the cornflour and water into a smooth paste then add the soy sauce and sugar and set aside. With the oil in the wok add the beef and crushed peppercorns and stir fry rapidly for 4 minutes a until the meat is evenly browned.
  2. Tip the meat along with its juices into the spare bowl, then turn down the heat and stir fry the rest of the ingredients together taking care not to brown them, just get them soft (use a low heat if you are not comfortable doing this without browning the vegetables)
  3. Add the beef and its juices back to the wok and mix well then give the sauce a final stir before adding that into the pan, turn the heat back up and cook until the beef is hot and the meal is warm all the way through, serve immediately.

Portuguese Pork

Ingredients
900g Pork (cubed)
2 Large Onions (chopped thinly)
4 Fresh Red Chillies
4 Tablespoons Vindaloo Curry Paste (or milder curry paste if you don't want it to hot)
6 Tablespoons White Wine Vinegar
1/2 Teaspoon Fenugreek Seeds
6 Tablespoons Tomato Purée
1 Teaspoon Turmeric Powder
1 Teaspoon Mustard Seeds (crushed)
1/2 Teaspoon Mustard Powder
1 1/2 Teaspoons sugar
Salt
250ml Water
A Splash of Oil
250g Rice

Equipment
1 SHARP Knife
1 Chopping Board
1 Mortar and Pestle
1 Mixing Bowl
1 Large Frying Pan
2 Large Pans (1 of which is 2/3rds full of salted boiling water for the rice)

The Good Bit
  1. Fry the onion off in a little oil until it goes clear and soft, put this along with all the other ingredients except the water in your mixing bowl, mix very well and leave to marinate for 2 hours.
  2. Once marinated pour the mixture either back into the large frying pan or just a large pan and add the water, bring to a low simmer and cook for another 2 hours, 20 minutes before the end cook your rice.

Chicken with Coconut Milk

Ingredients
4 Chicken Breasts (cut into strips)
6 Cardamom Pods
6 Cloves
2 Inch Cinnamon Stick
1 Onion (finely chopped)
1 Inch Ginger (chopped)
3 Green Chillies (de seeded and thinly sliced)
4 Tablespoons Lemon Juice
1 Teaspoon Turmeric
200ml Coconut Milk
1 Red Pepper (thinly sliced to garnish)
Oil

Equipment
1 SHARP Knife
1 Chopping Board
1 Blender
1 Frying Pan
1 Spatula

The Good Bit
  1. Quickly fry the chicken off in the pan in a splash of oil until it begins to brown, remove and set aside. Add a splash more oil to the pan and fry the cardamom cloves and cinnamon for 1 minute.
  2. Turn down the heat and add the onion and cook for 5 minutes, whilst this is doing, blend the garlic, ginger, chillies and lemon juice into a smooth paste, add into the frying pan along with the turmeric and cook for another 5 minutes.
  3. Pour in the coconut milk, season and bring to the boil, add in the chicken and simmer for 15 minutes.
  4. Serve when done, with a garnish of red pepper strips, these can ever be raw or quickly fried.
Serves 4

Chilli Chicken Burgers

Ingredients
500g Minced Chicken (or turkey)
2 Cloves Garlic (crushed)
1 Red Chilli (seeded and chopped thinly)
1 Tablespoon Fresh Mint or 1/2 Teaspoon Dried
2 Tablespoon Fresh Coriander or Parsley
2 Teaspoons Worcestershire Sauce
Burger buns, Lettuce, Tomato for serving

Equipment
1 SHARP Knife
1 Chopping Board
1 Mixing Bowl

The Good Bit
  1. Mix all the ingredients together then shape into 4 even sized burgers, brush with a little oil or melted butter and grill for 5 minutes on each side.

Kung Po Chicken

Ingredients
250g Chicken Breast (chopped into chunks)
1 Egg (split and only the white used)
1 Green Pepper (cored, seeded and chopped into chunks)
1 Spring Onion (chopped diagonally into inch long chunks)
1 Fresh Ginger (grated or thinly sliced)
4 Dried Chillies or 1 teaspoon chilli powder (take the seeds out and cut thinly)
2 Tablespoons Yellow Bean Sauce
1 Teaspoon Sherry
125g Nuts (not salted, peanuts, walnuts, cashew or almond)
250g Rice (cooked)
A Splash of Oil

Equipment
1 SHARP Knife
1 Chopping Board
1 Small Bowl
1 Wok
1 Spatula
1 Large Pan 2/3rds full boiling salted water (for the rice)

The Good Bit
  1. Get the rice on first then in the bowl mix in in this order the chicken, a pinch of salt, 1/3rd of the egg white and the cornflour.
  2. Heat the chicken then in the wok until it browns, take out and set aside. Now stir fry the spring onion, ginger, chilli and pepper for about 1 minute then put the chicken back in along with the yellow bean sauce and sherry, stir well and cook for a further minute, lastly just before you serve up, chuck in the nuts.

Roman Style Chicken

Ingredients
2 Red Onions (sliced)
2 Cloves Garlic (thinly chopped)
2 Yellow Peppers (cored, de seeded and sliced)
2 Red Peppers (cored, de seeded and sliced)
1/2 Teaspoon Dried Crushed Chillies
8 Boneless Chicken Thighs (or 4 small breasts)
100ml White Wine
Handful Fresh Basil (torn)
Olive Oil

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Frying Pan
1 Spatula

The Good Bit
  1. Heat a good splash of oil in the frying pan and fry the onions, garlic, peppers and chillies over a gentle heat for 5 minutes.
  2. Add the thighs pushing them down with the spatula to seal then flip them over and do the same with the other side, cooking for a further 5 minutes, until sealed on all sides.
  3. Add the wine, bring to a simmer, cover and cook for 10 minutes. when done add the fresh basil and serve immediately.

Thai Chicken Stock

Ingredients
1.5kg Chicken (uncooked)
500g Chicken Giblets
1 Onion (peeled and halved)
1 Carrot (chopped)
2 Sticks Celery
2 Cloves Garlic
1 Stalk Lemon Grass (chopped)
1 Lime Leaf (or the zest of a lime)
3 Large Red Chillies
1.8l Water.

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan
1 Wooden Spoon
1 Sieve

The Good Bit
  1. Put the chicken, giblets, onion, carrot and celery in the pan, top with the water and bring to a really slow boil, if it takes 45mins thats great! remove any scum that floats from time to time and make sure it's just bubbles coming to the surface.
  2. Add the rest of the ingredients and cover then cook for 2 hours.
  3. Take out the chicken (use this in another meal if you wish) Strain the stock taking care not to press any of the vegetables as this will make the stock cloudy, use what you want straight away and freeze the rest.
Makes 1.5l

Thai Vegetable Stock

Ingredients
2 Onions (quartered)
4 Red Chillies
250g Carrots (halved)
1/2 White Cabbage (Halved)
1 Bunch Celery (Chopped, including leaves)
50g Fresh Coriander (with stalks)
25g Basil (with stalks)
25 Black Peppercorns
1/2 Teaspoon Salt
1 Teaspoon Muscovado Sugar
2l Water
If you can get hold of the next 2 ingredients your stock will be great but they can be left out
1/2 Head of Chinese Leaves
1/2 Mooli Radish (peeled)

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan (or Casserole Dish)
1 Sieve

The Good Bit
  1. Whack all the ingredients into a large pan and bring to the boil, cover and simmer for 1hr.
  2. Take the lid off then boil hard for 10mins to reduce the stock, cool then strain, freeze any stock that you will not be using straight away.
Makes 1.8l

Thai Banana Soup

Ingredients
A Splash of Oil (groundnut for authentic, olive will do)
50g Spring Onions (sliced)
1 Clove Garlic (finely Sliced)
200ml Coconut Milk
400ml Vegetable Stock (if your local supermarket sells a thai veg stock in the chillers use that for an excellent taste)
1/4 Teaspoon White Pepper
3 Tablespoons Soy Sauce
1/4 Teaspoon Salt
1/4 Teaspoon Sugar
1 Banana (sliced into large slices)
1 Red Chilli (sliced into fairly large slices)

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan
A Blender

The Good Bit
  1. Fry off the onion and garlic in the oil until soft and golden, whack in the rest of the ingredients, bring to the boil, drop the heat and simmer for 5 minutes.
  2. Set aside 1/4 of the banana and chilli then blend the rest of the soup, once blended add the bits you set aside and reheat, serve hot.

Popeye Soup

Ingredients
2 Large Onions (roughly chopped)
2 Cloves Garlic (roughly chopped)
1 Red Chilli (finely chopped)
1 Bunch Fresh Mint (roughly chopped)
1 Bunch Fresh Parsley or Coriander (roughly chopped)
500g Fresh Spinach (roughly chopped)
1.2l Vegetable Stock
2 Lemons (juiced)
Pinch of Dried Nutmeg
A Splash of Oil

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan
1 Blender
1 Wooden Spoon

The Good Bit
  1. Cook the onion, garlic and chilli in the pan in a splash of oil for 10-minutes, or until soft and golden, add the herbs and stock and bring to the boil (not the spinach), simmer for 15 minutes.
  2. Add the spinach and cook for another 2 minutes then add the lemon juice, nutmeg and salt and pepper to taste, blend with a hand blender or if using a food processor, once blended return to heat through for a short while, (not to long as the colour will go)
Serves 4

Lentil Soup

Ingredients
1 Onion (finely chopped)
1 Sprig Fresh Thyme (1/2 teaspoon dried)
2 Carrots (finely diced)
2 Garlic Cloves (finely chopped)
1 Red Chilli (seeded and finely chopped)
3 Tomatoes (roughly chopped)
100g Red Lentils (you can swap these for split yellow peas but you must soak them the night before)
1.2l Vegetable Stock
4 Tablespoons Natural Yoghurt (Greek yoghurt is good too or for those not worried about their waist line whipped double cream!)
1 Lemon
A Splash of Oil
1/2 Teaspoon mustard (can be left out)

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Pan

The Good Bit
  1. Heat the oil in your pan and cook the onion, carrot and thyme for about 4 minutes until starting to soften, add the garlic, chilli and mustard if using and cook for another couple of minutes.
  2. Whack in the Tomatoes, lentils and stock, bring to the boil, cover and simmer gently for 30minutes, test that you can crush a lentil with the back of a spoon against the side of a pan, if you cant, cook a little longer.
  3. Mix half the lemon zest into the yoghurt and pour the juice into the soup, season the soup with salt and pepper, ladle into four bowls with a scoop of the yoghurt in the centre of each and sprinkle over any remaining zest. A good Sprinkle of freshly ground black pepper goes extremely well with this.

Pork Balcho

Ingredients
4 Tablespoons Vegetable Oil
1 Tablespoon Grated Fresh Ginger
1 Tablespoon Crushed Garlic
1in Cinnamon Stick (broken up)
3 Dried Red Chillies (chopped)
4 Cloves
2 Teaspoons Cumin Seeds
10 Black Pepper Corns
675g Pork (cubed)
1 Teaspoon Ground Turmeric
200ml Warm Water
25ml Tomato Purée
1/2 Teaspoon Chilli Powder
1 Large Onion (finely chopped)
1 Teaspoon Salt
1 Teaspoon Sugar
2 Tablespoons Cider Vinegar

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Frying Pan/Wok
1 Pestle and Mortar
1 Spatula

The Good Bit
  1. Heat the oil in the frying pan and add the ginger and garlic and fry for 30 seconds, grind together the cinnamon, chillies, cloves, cumin seeds and peppercorns in to a fine powder then add to the frying pan for a further 30 seconds.
  2. Add in the pork and turmeric and turn the heat up a little, cook for 5 minutes until the juices start to come out from the pork, add in the water, tomato purée and chilli powder, cover and heat for 30 minutes.
  3. In another pan with a splash of oil in, fry off the onion until it is well browned then add that to the pork along with the salt, sugar and vinegar, stir well and cook for another 30 minutes.
  4. Serve

Beef Vindaloo

Ingredients
1 Tablespoon Cumin
4 Dried Red Chillies
1 Teaspoon Black Pepper Corns
The Seeds From 5 Green Cardamom Pods
1 Teaspoon Fenugreek Seeds
1 Teaspoon Mustard Seeds (or mustard if you cant get hold of the seeds)
1 Inch Piece of Ginger (grated)
2 Teaspoons Coriander
1/2 Teaspoon Turmeric
1 Garlic Clove
A Pinch of Sugar and Salt
4 Tablespoons White Wine Vinegar
900g Beef (cubed)
1 Large onion (as finely chopped as you can manage)
A Splash of Oil or Two
375g Rice (again anything but pudding)

Equipment
Pestle and Mortar (or instead of seeds use powder)
1 SHARP Knife
1 Chopping Board
1 Large Frying Pan
1 Mixing bowl

The Good Bit
  1. Grind up the cumin seeds, peppercorns, fenugreek, cardamom and mustard seeds (leave out the mustard if you are not using seeds) and chillies until you have a fine powder, or just mix them all together if you are using dried powders and mustard from a jar and keep in the mixing bowl.
  2. Heat your oil in the frying pan and cook the onion until it is golden brown, then mix this in the mixing bowl with your powder the white wine vinegar a pinch of salt and a pinch of sugar.
  3. Now fry of the beef in a little oil until it begins to brown on all sides, then remove from the pan and leave to settle whilst you add another splash of oil to the pan and cook the garlic and ginger for 2mins then add the coriander and turmeric and cook for another 2 minutes.
  4. Add your onion and spice mix to the frying pan now and cook for a further 5 minutes, really get those flavours mixing before adding the meat along with a good glass of water (not a pint but imagine a glass of something cold when you've just come in from a hot day outside and that is the size you want.
  5. Cover and cook for 1-1 1/2 until the meat is really tender (at this stage if you need more liquid just add a little more water, if the sauce is too liquid then turn up the heat and uncover for 5 minutes. Serve with rice

Beef Madras

Ingredients
450g Beef (cubed)
250g Rice (any rice is fine just don't use pudding rice)
1 Large Onion (finely sliced)
4 Cloves
4 Green Cardamoms
2 Whole Star Anise
4 Green Chillies (chopped)
2 Red Chillies (chopped)
3 Tablespoons Madras Masala Paste
1 Teaspoon Dried Turmeric
4 Tablespoons White wine Vinegar
Sugar to Taste
A Splash of Oil
Coriander and Lemon Wedges to serve (optional)

Equipment
1 SHARP Knife
1 Chopping Board
1 Large Frying Pan/Wok
1 Spatula
1 Large Pan (2/3rds full of boiling salted water)
1 Colander

The Good Bit
  1. Start by putting the rice on, cook to packet instructions, usually 10-15 mins whilst that is cooking heat a splash of oil in the frying pan and cook the onion until it turns golden brown, then add all the spices and cook for another 2-3 minutes.
  2. Add the meat, the white wine vinegar and a pinch of sugar (keep tasting the sauce until you are happy that the sugar has taken the tang from the vinegar) cook over a medium heat until the beef is cooked through and soft (your rice should be about ready too at this time)
  3. Once the rice is done (taste test) wash your rice (place it in a colander and then rinse with boiling water) whilst you are doing this turn the heat up on the frying pan to reduce any remaining sauce. Then serve in a ring of rice. Top with shredded coriander leaves and lemon wedges if you want to be fancy!
