Prawn Cocktail

Ingredients
2 Egg Yolks
1 Teaspoon English Mustard
1 Teaspoon Mustard Powder
250ml Vegetable Oil
2 Tablespoons Tomato Sauce
A Splash of Tabasco Sauce
50g Ready to Eat Prawns
1 Few Lettuce Leaves
2 Avocados

Equipment
1 Mixing Bowl
1 Balloon Whisk
1 SHARP Knife
1 Chopping Board
1 Metal Spoon

The Good Bit
  1. Drop your egg yolks, mustard and mustard powder into your bowl and begin to whisk, slowly drizzle the oil in and whisk at the same time, you should get to a consistency similar to that of shop bought mayo then add in the tomato and tabasco sauce. (do not add all the oil in one go, it will spoil the mayonnaise)
  2. Line 4 glasses with your lettuce leaves, then drop in the avocado, add on top a dollop of your seafood sauce and then arrange a few prawns on top and serve.

Avocado Ice Cream

Ingredients
2 Ripe Avocados (peeled and stoned)
150ml Single Cream
300ml Double Cream
75g Caster Sugar
1 Lemon (juiced)
50g Toasted Chopped Almonds (optional, if you cant get them toasted just fry in a dry frying pan)

Equipment
A Blender/Food Processor
1 Mixing Bowl
1 Balloon Whisk
1 Spatula
1 Old Ice Cream Tub

The Good Bit
  1. Blend together the single cream and avocado until smooth. Whisk the double cream until it forms soft peaks.
  2. Fold the sugar, 2 tablespoons of lemon juice and the avocado mixture (and the nuts if using) into the double cream with the spatula.
  3. Whack this lot into your old ice cream tub, cover and freeze. Move to the fridge 30mins before you want to serve.

Crab and Avocado Bows

Ingredients
350g Pasta Bows (any pasta will do, bows just look nice)
1 Small Red Onion (finely chopped)
4 Tomatoes (cut the seeds out and dice the rest)
1 Avocado (peeled, stoned and finely diced)
A Good Handful Fresh Coriander
Juice of 1 Lime
1/2 Teaspoon Chilli Powder
1 175g Can of Crab Meat (or use fresh if you have some spare)
Olive Oil
Salt and Pepper

Equipment
1 Large Bowl
A SHARP Knife
1 Chopping Board
Juicer
1 Wooden Spoon
1 Spatula

The Good Bit
  1. Cook the pasta according to packet instructions (usually 10-15 minutes) in lightly salted water.
  2. Mix together, the finely chopped onion, the diced avocado, tomato and chopped coriander, add in your lime juice juice and a splash of olive oil.
  3. Once the pasta is cooked drain the pan, chuck in the drained crab meat and the chili powder and heat through for about 2 minutes stirring well then add the advocado mixture and give another good stir, season then serve.
