1 Spring Onion (finely sliced)
1 Clove Garlic (finely sliced)
2 Red Chillies (finely chopped, seeds in for a hot sauce out for a cooler sauce)
2 Fresh Coriander Leaves (finely chopped)
4 Tablespoons Caster Sugar
6 Tablespoons White Wine Vinegar
1/2 Teaspoon Salt

The Good Bit
- Dissolve the sugar in the vinegar first then add the rest of the ingredients.
- Serve in little bowls like you see in Chinese restaurants. Can be drizzled over fish or grilled meat.
